I peel it and keep it in a jar of wine vinegar in the fridge. You could use sherry instead of the vinegar, too. It gets a wonderful gingery bouquet, and the ginger DOESN'T get sour -- I use it for gingerbread and it's just fine.

I peel the ginger and cut it into knobs and chunks, then pack it into jars. I cover it with a mix of brandy and vinegar and keep it in the refrigerator. These keeps for a very long time, and the brandy-vinegar mix makes a wonderful addition to marinades. I've tried this using straight sherry but it doesn't keep as well.

The two ways I have previously stored it are A) freeze it and grate it into whatever you are cooking/brewing without letting it thaw (if you let it thaw, all of the water seeps out of it) or B) (this is the way restauraunts do it) peel off the outer skin and store the peeled roots *in* water in the refrigerator.

I believe B) works a little bit better than A).

Keep it in the freezer wrapped in aluminum foil. When you need some, simply unwrap it, grate off as much as you need, and put it back. I've never had any go bad that way, at least I've managed to use it all up first.

I store fresh ginger in foil or zip bags in the freezer. It stays fresh and doesn't lose its bite.
