I am particularly interested in finding a recipe for chai. I used to buy some wonderful stuff, called Redwood Chai, when I lived in Northern California, but cannot find any at all out here.

Cha in Chinese, Chai in Hindi...

But Indian Chai is that famous spice drink with cinnamon, cardamon, cloves, peppercorns, black tea, and milk. Maybe that is what is meant?

One of my favorite cafes uses earl grey tea, with cinnamon, cardamon, fennel, honey, and milk. Wicked good!

I have a recipe for Nepali chiya (or chai, as they say in Hindi).

Boil a handful of Darjeeling tea or tea from Ilam in some milk or half n half (depending on how rich you want it. Add powdered clove (Nep: lawang), green cardomum (Nep: sukhmel), cinnamon (Nep: dalcini), pepper (Nep: maric), and sugar.
