Lemon thyme uses.

I recently have grown a couple of lemon thyme plants. In addition to being pretty, they are very fragrant. I've used the leaves in a cappellini with lemon and herbs recipe and in some soup stock, and now I'm looking for some other ways to use it. I'm a vegetarian, but not a vegan. I was thinking in a grilled veggie marinade or something, it might be good. Any suggestions or help?

I use Lemon Thyme just about anywhere and in anything. I adore the fragrance that it gives to a dish. Try using it sparingly as a tea herb with ginger and mint, if you've never had thyme tea you're in for a surprise. Don't use too much though, thyme can be bitter in large amounts.

If you eat Chicken - stuff the cavity of a roaster chicken with ½ a lemon, ½ peeled medium size onion. Several sprigs of the lemon thyme and a couple sprigs of rosemary.

Baste with clear chicken stock mixed with a couple of tbsps. of lemon juice.

To make gravy from the pan drippings...
Add 1 tbsp. cornstarch, 1 tbsp. soy sauce and good pinch of sage.

Dear Shae - I love lemon thyme, too. As a veget., you might try in maarinade for tofu sticks. Or, for grilled veggies. I like it in homemade salad dressings and pasta sauces. Even a bit in puddings. A quick bread with lemon thyme, zested lemon peel and lemon balm is yummy! There is a wonderful Greek Lemon-Egg-Rice Soup, often served at Easter, that lemon thyme is great in. Use your imagination & enjoy!

I mix dried lemon thyme with seasoned breadcrumbs and use it to coat chicken before cooking. It gives a nice lemon hint. It would probably be good on fish too.
