My favorite for sore throats is to make an infusion from Cinnamon Sticks and Thyme Leaf. Put about 3 Cinnamon Sticks and 1 Tbsp. Dried Thyme into a Pint Jar. Fill with Boiling water. Cap. Steep 30 minutes or more. Strain. Rewarm. Drink slowly plain, or add Honey or Slippery Elm Powder for extra soothing properties. It's wonderful for diarrhea as well, and actually tastes rather pleasant. Echinacea and Myrrh Tinctures can be mixed in a small amount of water and used as a gargle, as well. If the infection is Viral, try adding St. John's Wort and Honeysuckle Blossom Tinctures, as well. Hope this is helpful.
