Juniper salmon.

Blog categories:
Botanical name:

All you need is a fresh salmon and some juniper twigs.

And vegetables, of course. And an oven, and ...

Clean out the fish, arrange the twigs on a deepish oven tray, and arrange the salmon (skin and all) on top of the twigs. Put a few twigs into the belly cavity of the fish as well.

Bake at 200-225 degrees C for 40-45 minutes.

Serve hot. Aioli makes a nice sauce. And yes, this particular recipe needs no salt, no pepper, no dill, no lemon, nothing at all except the fish -- and a few stray juniper needles.

If you don't have a juniper (Juniperus communis) you can use spruce or fir twigs as well.
